Designed by renowned Tuscan Chef Cesare Casella, Dean of Italian Studies at the International Culinary Center, where the Italian Culinary Academy is a based, the Italian Culinary Experience immerses students in Italian cuisine, language and culture at campuses in New York and Parma, Italy.

Students enrolled in the Italian Culinary Experience spend 10 weeks at the Italian Culinary Academy in New York and 9 weeks of additional training at ALMA, The International School of Italian Cuisine led by Gualtiero Marchesi. After classroom traiing, students are placed in a selected restaurant for a 9-week stage period where they learn about a specific regional cuisine and how to work under pressure!

The program wraps-up with a final 1 week in New York where students complete a multi-course meal for friends and family and take a final practical exam. Graduates of the Italian Culinary Academy work in media, catering and at restaurants such as Del Posto and Craft Steak in New York and L’Academie Barilla in Parma, Italy.
