First Course
Duck Confit *
Served with wild berry salad
* Duck Confit (French: Confit de Canard) is a French dish made with the leg of the duck.
It is prepared in a century-old process of preservation consists of salt-curing a piece of meat,
(game duck in this case) and then poach it in its own fat
SECOND COURSE
Quails
marinated with herb and garlic, served with soft cranberry polenta
* Polenta is made from coarsely ground cornmeal and is a staple of Northern Italy
It makes a wonderful serving base for the quails in this dish.
THIRD COURSE
Roasted Rabbit Leg
marinated with honey and lemongrass
served with juniberry sauce and herbed roasted baby carrots
FOURTH COURSE
Venison Stew
deer stew with pearl onions, baby carrots, fingerlings potatoes,
whole-peeled harems tomatoes, and red wine reduction

Chilled Berry Mousse
served with crusted kiwi, mango, and wild berry
