Join Waterbar and CleanFish for an evening celebrating Wild Nunavut Arctic Char. In honor of this year’s catch, Waterbar Executive Sous Chef Justin Bade will create a special dinner featuring a number of different preparations of Arctic Char. Wild Nunavut Arctic Char is caught by an Inuit community living above the Arctic Circle in Nunavut, Canada, an area where polar bears outnumber people by a ratio of 2 to 1. The rich taste and elegant texture of Wild Arctic Char have much to do with where it originates from as to how it is caught.
Wild Nunavut Arctic Char is caught in pristine, frigid Arctic waters using traditional, sustainable methods passed down from generations of Inuit fishermen. The eight-week season starts in July when the ice breaks enough to allow fishing and spans into early September when the waters freeze over again. Wild Arctic Char is a flavor not it be missed; the dinner at Waterbar is the only opportunity to enjoy the scarce Arctic Char in North America.
