The Art of Truffles is demystified and perfected in this three-day series that will take you from ganache to tempering (and to Heaven and back). Each day will focus on specific techniques designed to help you create your own unique flavors and designs.
Day 1: Ganache and Fillings
Day 1 will focus on the correct technique for creating a variety of ganache for both rolled and dipped truffles.

Day 2: Fillings for Truffle Shells
Learn the tricks to perfectly seamless truffle shells for those melt-in-your mouth textures.

Day 3: Tempering and Rolling
Master the technique of tempering chocolate as we explore all three methods: Tabling, Seeding and the Direct Method. Your creations from Days 1 and 2 will then be dipped into Milk, Dark or White tempered chocolate and receive their finishing touches, from hand-painted designs to working with transfer sheets and colored cocoa butter.

The Gourmandise School was born in the early '80s when a little Parisian girl discovered the wonders of sweets. As she grew up, Pastry Chef Clemence Gossett, honed her pastry skills at her family's auberge in Provence. Hadley Hughes, a sweet native of Atlanta, joined the school in 2010. Her southern charm and gluten-free recipes round out a delicious menu of courses. The Gourmandise School offers cooking classes, private lessons, Professional Baking Series for Baking, Pastry, Chocolate and Confections and Corporate and Team-building Events.
