After earning our college degrees, we decided it was time to put our knowledge of nutrition and exercise to work. We gathered our favorite original recipes—ones that best complemented our active lifestyle—and taught natural foods cooking classes at the local YMCA and area elementary schools. We found that most people are too busy to spend much time in the kitchen. Like you, they work or chase children around, and then spend evenings and weekends enjoying sports, outings, or cultural events. Yet they do want delicious and nutritious meals. Our classes helped us spread the good word that eating for added energy does not require a lot of time, effort, or money. Our diet is unique in its simplicity—and in its freedom from gimmicks. Many of our easy-to-make, nutritionally balanced recipes can stand alone or serve as the heart of a meal.
We advocate a daily meal pattern that can make a tremendous difference in helping you lose fat, pounds, and inches, and easily keep extra pounds from sneaking back on. This pattern, which consists of a light breakfast, moderate lunch, and light dinner, takes into account the fact that most of us feel much too tired to fix a large meal at the end of a long day. You’ll find our discussion of this light-moderate-light eating plan (also called the LML Plan) in chapter 3.
