Tellers Chophouse, now in its 10th anniversary year, hosts a once-in-three-decades Opus One Wine Dinner on Wednesday, February 3 as directed by Corporate Beverage Director Paulo Villela with menu designed by Corporate Chef Cornelius Gallagher. Opus (www.opusonewinery.com) representative Frances Posener will be present for this launch of the 2006 vintage of Opus One on Long Island. The new vintage will be paired alongside its 2005 sibling but also magnums of 1984 and 1990 vintages thus featuring the vineyard’s fruits from three decades. Opus One is a partnership between Robert Mondavi of the Robert Mondavi Winery in Oakville, California and Baroness Philippine de Rothschild of Chateau Mouton Rothschild near Bordeaux, France. Menu selections from the $200 per person all-inclusive three-course dinner include:

APPETIZER SELECTIONS
*Classic lobster bisque with lobster dumpling and tarragon pepper cream
*Braised beef short rib with Parmesan polenta and cabernet wine sauce
*Oven baked clams with Tellers special stuffing

MAIN COURSE SELECTIONS
*Tellers Delmonico ribeye with truffle butter sauce and crispy onions
*Filet mignon Wellington with brie cheese fondue and puff pastry
*Roasted organic chicken with cornbread stuffing, mushrooms and gravy

DESSERT SELECTIONS
*Warm apple cobbler with cinnamon ice cream
*Chocolate souffle cake with Tahitian vanilla ice cream
