It seems “everyone” - chefs, foodies, consumers, educators, legislators - is asking questions about finding “correct” sustainable products. Many of us may not understand the complexities involved in selecting sustainable products or have the best information to make informed purchasing decisions. Join us for an evening where four industry professionals will give us their definite opinions and rationals of food-systems sustainability. We’ll discuss questions such as:

- What really defines sustainability? Is farmed or wild seafood more sustainable?
- How often is the seafood-watch list updated? Is there such a category as organic seafood?
- Is grass-fed beef healthier than organic?
- How does “seasonality”, the new buzz-word, alter the definition of “local”?
- How good is USDA organic certification, and is it likely to be updated soon?
- Can serving organic be profitable? Are consumers willing to pay the premium, particularly in current economic times?
