"After a major makeover, the legendary Pump Room reopened in preview mode starting Sept. 12 in preparation for a Oct. 11 grand opening. You'll find it inside Public, a revamp of the Ambassador East Hotel by Ian Schrager, the force behind the transformation of New York's Clift Hotel into Gramercy Park Hotel and other hotel rehabs. Chef Jean-Georges Vongerichten, the chef behind ABC Kitchen, Mercer Kitchen, Spice Market and more in New York, is top toque, with Bradford Phillips (most recently of LM) serving as executive chef and Kady Yon (formerly of Boka Restaurant Group) as pastry chef. Like a traditional hotel restaurant, it will serve breakfast, lunch and dinner. The dinner menu reinvents classic Pump Room dishes such as oven-roasted lobster and wiener schnitzel alongside simple seafood and steak dishes. Served after 10:30 on weekdays and 11 p.m. on weekends, a late-night food menu offers whole-wheat pizza, small plates such as crab toast with lemon aioli and large plates such as fried organic chicken with sweet corn and chili glaze. The restaurant's library room serves as a coffee bar during the day, pouring myriad blends alongside house-made pastries and breads; by night, it will lean more lounge-like to serve wine, beer and cocktails alongside small plates and sweets.
