Chef Tricia Brown (http://www.gourmetrix.com) and Big Bottom Market, a unique gourmet food, wine and general store are offering a new series of cooking classes starting on November 6th with a class titled Authentic Mexican Taco Fiesta that will demystify Mexican cooking and teach participants how to wow their guests with great dishes.

The class is priced at $85, includes 3 hours of instruction, the chance to eat the foods prepared and detailed recipe cards.

Registration closes on November 1st and interested participants can sign up for the class by emailing Tricia directly at [email protected].

"I taught cooking, and food and wine pairing, classes for many years in NY, both for Chef training programs and for the every day foodie who is looking to demystify the kitchen," said chef Tricia Brown. "I am passionate about sharing my knowledge of food technique and flavors and am looking forward to getting back into the classroom with a group of energized and hungry students."

Detailed class description:
The key to excellent tacos is warm homemade tortillas and fillings brimming with authentic Mexican flavors. Learn how to make your own tortillas from scratch, as well as three fillings that come from different regions in Mexico. You will also get hands-on experience learning how to create two different salsas to garnish the tacos, as well as a unique take on the classic rice and bean accompaniment. The class with end with a group meal created during the class, as well as a glass of wine.

* Homemade corn tortillas with two fillings:
* Spicy Roasted Butternut Squash and Pinto Bean
* Achiote Yucatan Chicken

Condiments:
* Creamy avocado sauce
* Roasted tomato salsa
* Crema
* Pickled onions

Served with:
* Smoky black beans
* Cilantro-infused rice
* Jicama-radish salad with lime dressing
