Independence Day celebrations at ITC Maratha, Mumbai. Featuring delicacies from Maharashtra, Goa, Uttar Pradesh, Kashmir, Rajasthan, Gujarat, Bengal, Hyderabad, Punjab and Tamil Nadu. The Peshwa Pavilion at ITC Maratha, Sahar, will host a special buffet lunch and dinner as part of the Independence Day celebrations. In an endeavour to salute the spirit of the men and women of the armed forces, the buffet will be offered at a 50% discount to armed forces personnel, both serving and retired. The highlights of the buffet include; from Maharashtra - Bhindi chi bhaji (stir-fried Okra with Indian spices), Komdi curry (traditional Malvani chicken curry), Bhelpuri (a puffed rice snack with potatoes and a tangy tamarind sauce), Punjab Shikanji (A sweet and sour lemon cooler), Tamil Nadu Panakam (A jaggery and cardamom drink), Delhi -Papdi chaat (crispy dough wafers garnished with a combination of potatoes, chickpeas, yogurt and flavored with spices and tamarind & mint and coriander chutneys), Goa - Prawn Balchao (shrimps cooked in a piquant sauce, served chilled), Tamil Nadu Sundal (Chickpeas tempered with curry leaves and mustard) Uttar Pradesh - Mahi Mussallam (Salmon pieces slow cooked with aromatic spices), Goa - Chicken Cafreal (Chicken cooked in coriander and chili gravy), Parsi - Patrani Macchi (Fish wrapped in banana leaf and baked) Kashmir - Mutton Roganjosh (Succulent lamb pieces cooked in traditional Kashmiri style), Gujarati Makkai Paneer nu Shak (Cottage cheese and corn medley, mildly spiced), Sarson ka saag (Mustard leaves given the Punjabi treatment, served with makki ki roti) Bohri -Dal Fry-Yellow lentils tempered with cumin and chilies, Bohri gosht biryani - Tender lamb and potatoes cooked together with the fragrant basmati. Desserts: Madhya Pradesh Lapshi (Broken wheat simmered with milk sweetened with sugar), Bibinca (A layered pancake preparation from Goa, Maharashtra - Kesari Shrikhand (Hung curd flavoured with saffron and nuts) Rajasthan Ghevar (A speciality dessert from Rajasthan napped with reduced milk), Bengal - Rossagulla (A reduced milk dumpling poached in sugar syrup) The soaring heart of the ITC Maratha, The Peshwa Pavilion is an architectural tribute to the city's vibrant and glorious past. Rising from the ground floor at the lobby and reaching way up to the glass ceiling, it dwarfs even the six palms that give the Pavilion an alfresco feel of a Mediterranean town square. Facing the entrance is an arch inspired by the Gateway of India, which houses the Residents Lounge covered by the famed Mumbai Bandstand.
