French Brasserie or Bistro cuisine is down to earth food. This type of cooking started in home kitchens and spread to restaurants. Bold flavors and seasonings bring out the best in this rustic cuisine. Bistro cuisine is about friends and neighbors relaxing in the kitchen or on the back porch with crusty bread and local wines. Chef Bernard will demonstrate some recipes where the traditions of French cuisine meet the flavors of the American market with a menu reflecting the season and a focus on the simplicity of fine ingredients: Seven Layer Salmon Bites - Herb & Garlic Mussels - Endive Spears with Goat Cheese, Mandarin Orange and Almonds - Crusted Cod Brandade with Spring Mix Salad - Pear Mousse with Almond Biscotti. Chef Bernard will use his memory from his early childhood on a dairy farm in Alsace-Lorraine, France, where he learned to cook watching his mother and grandmother whip up the family specialties, along with his experience working in fine restaurants in Provence, France. Seating will be at communal tables to encourage making new friends and talking about the courses. This event can be packaged with an overnight stay at the Toutorsky Mansion*.
