FIRST COURSE
Mediterranean Salad
with cucumber, bell pepper, sliced red onions, fresh oregano herb, basil, and goat cheese served with a lamb skewer marinated in coriander mint, garlic, olive oil and drizzled with a cucumber yogurt sauce

SECOND COURSE
Shrimp, Squid, and Hearts of Palm*
lemon blanched shrimps and squids served with hearts of palm marinated in
champagne vinegar, shallot, parsley, basil, and extra virgin olive oil

* sometimes called "millionaire's salad," hearts of palm are considered a rare delicacy, as the act of harvesting the bud kills the palm
THIRD COURSE
Pan-seared Red Snapper
pan-seared to golden brown, served with sauteed baby bok choy, cherry tomatoes, herb and fennel deglazed with white wine, and drizzled with Vincotto* sauce

* Vincotto is a sweet, dark vinegar from Apulia, southeastern Italy

FOURTH COURSE
Rib Eye Steak
6 oz. rib eye steak grilled to order with caramelized onions and mushrooms, served with fingerling potatoes, caramelized shallot and pancetta* vinaigrette

* Italian bacon made by salt-curing and spicing pork belly, not smoked

FIFTH COURSE
Mediterranean Fruit Tart
served with a caramel sauce and vanilla bean ice cream
