The concept of our seasonal series classes is enjoying the freshness and flavors of the season. We try and highlight clean flavors and show our students how to emphasize the vegetable while doing very little work, leaving only the purest of flavors fresh from the earth.Winter squash is a fantastic winter staple: they usually arrive late in the season and have a long shelf life, so these vitamin A and vitamin C-packed veggies will keep you strong and sniffle-free all winter long. They can be baked, steamed, cooked and then puréed… there are so many ways to munch on this fiber filled treat! Join us for our gloriously gratifying session on the veggie of the season. We’ll teach you about the differences between the many different varieties and show you how to pick them, handle them, cook them and store them.
