Food writer Matthew Goodman, author of Jewish Food: The World at Table and writer-producer of a film on the history of the International Bagel Bakers’ Union in America, presents the fascinating and little-known history of the Union. For decades the Union’s bakers produced every bagel made in New York City until, in the mid-1960s, the combination of frozen bagels and the bagel-making machine destroyed the Union.
