Food has been abundant and convenient for consumers in industrial societies for much of the mid-20th century. We have been able to take for granted the safety and dependability of our food supply. However, the food system is increasingly becoming an area of struggle. Consumers continue to expect affordable, convenient foods, but they also desire food that is healthy and produced in an environmentally friendly way. How do we define “healthy” or “environmentally friendly”? The 2009 Choices conference will provide a venue to explore these issues and how they affect individuals, families, farmers, schools, hospitals, restaurants, retail food outlets and others involved in our food system.
